Our restaurant specializes in the traditional cuisine of the Shan people, a minority ethnic group in Myanmar. Shan cuisine focuses on “utilizing plant enzymes” and “benefiting from microbial fermentation,” which supports “metabolic activity” and “enhances nutritional function,” providing a healing effect through everyday meals.
In Myanmar, the preferred flavors vary by region and ethnic group. In the hot city of Yangon, dishes are rich and heavily seasoned with fish sauce, while the cuisine of the Shan people, who live at an altitude of 1,000 to 1,500 meters, is often healthier, emphasizing the natural sweetness of vegetables and the umami created by fermentation.
Our head chef is of Shan heritage and has been passionate about Shan cuisine since childhood. With 15 years of experience cooking at renowned restaurants in Myanmar since 2010, he is well-versed in a wide range of Myanmar dishes. While preserving the traditional flavors of Shan cuisine, he also offers new, modernized dishes to suit contemporary dining preferences.
